WEEKNIGHT DINNERS // Sheet Pan Meals & Why I love Them!

Do you know what you are eating for DINNER this week? How about a sheet pan meal.

The worst feeling is coming home tired after a long day with hungry kids and not knowing what to cook. Let me help relieve some of that pressure and burden by sharing why I love sheet pan recipes and how much they have helped me.


I love making sheet pan recipes, especially on BUSY evenings. The food always comes out WARM and CRISPY, and it makes a lot of food to feed my family. The meals are always tasty, and the combinations of foods are endless. The end result is always HAPPINESS and easy clean up.


Most sheet pan recipes include meat, veggies, spices and oil. I have a recipe at the end of my 5 tips that will blow your mind and get you excited about making dinners.


Here are my top 5 reasons to make a sheet pan meal, but do you need convincing? It seems like a no-brainer, right.


1. Sheet Pan Meals Are Easy

The best part of sheet pan meals is they are easy to put together and satisfying. You can make them vegan, vegetarian or mostly plant-based or with meats. Sheet pan recipes are also a great way to use any food that's sitting in your fridge. Add oil and spices to your ingredients, so they cook to perfection. If you prefer to skip prepping your food, there are pre-cut and prepared options in the frozen section at the grocery store that you can use.



2. Minimal Tools

You only need a few kitchen tools and can make a delicious, incredible meal. You will definitely need a sheet pan, a bowl is optional, a spoon or spatula, a knife to chop ingredients, some foil or parchment paper and plates to serve your meal.


3. Delicious Ingredients

My favorite way to put together a sheet pan meal is to grab a veggie or two, carbs like bread or potatoes, cheese like brie and a protein like salmon or beans. Then add olive oil, avocado oil or coconut oil and your spices. Mix it all together, and you have a satisfying and filling meal.




4. Makes large amounts

Try baking several pans in the oven at the same time. Make several pans of the same recipe or two pans with different recipes. This way, you can make leftovers and serve them to friends, family and guests.


5. Easy Clean UP

Cleaning up is a breeze. If you line the pan with parchment or foil, you can toss them in the garbage. Then stick the pan back on the shelf without needing to wash it. If you prefer to not use parchment paper or foil, that is fine. The pan usually only requires a quick rinse.

This recipe is so quick and ready to eat in minutes. I pop it in the oven to soften the cheese and spinach for a few minutes. It is the best warm winter salad.


Ingredients

  • Fresh spinach - but you could use any dark green salad greens you like

  • Sliced tomatoes

  • Pita chips

  • Plain goat cheese sliced into disks

  • Jalapeño slices

  • Crumbled feta

  • Parmesan cheese

Dressing

  • Olive oil

  • Balsamic vinegar

  • Salt

  • Pepper

  • Honey drizzle


Tips and Tricks

  1. Before prepping your ingredients, preheat your oven to 400 degrees to save time.

  2. Use an oven liner to keep the bottom of your oven free from spills. They are inexpensive and replaceable. Sheet pan meals shouldn't be messy, but it's nice to have them just in case.

  3. Fun fact: the drawer below the oven helps keep your food warm after baking, NOT for storing your sheet pans. I prefer to store my sheets on their sides on a shelf to access them when I need them.

  4. Buy parchment paper that is precut for sheet pans. You can find the one I use in my amazon store.
